FOUR Classic Fall Soup Recipes
Fire roaring in the fireplace, football on the television, windows cracked open to let some of that cool fresh air in…. sounds blissful right? How about rushing into the door, tossing backpacks on the ground, grabbing mismatch soccer socks and the jersey out of the dryer and flying right back out of the door? Sound familiar to any of you? I feel like there are more of the latter in my life right now, and that’s okay, it’s just a season, right?
There is NO better time than fall for a crockpot soup. The cool weather, busy sports season, and time change makes your slow cooker your real BFF.
Over the last 12 years of being a mother, I have cooked many a soup recipe, some hits and some misses.
The one thing that could make those two scenarios EVEN better… your slow cooker!
How many do you have? I have 3, you know, options. I have a really big one, a regular size one that I have had for years, and I have a small one for dips. I enjoy entertaining so it is nice to have multiple going at once to keep things warm.
I’ve compiled a few of our most remade soups to share with you here. I’ve narrowed down my list to my top four, my go-tos, fam faves if you will.
These are the recipes that are quick, simple, and delicious. We have no time for fussy at our house. We need it to go in, get hot, and ready to serve up.
These recipes are “kid-friendly”, meaning minimal color, minimal chunks, etc., if you know what I’m sayin’. Who can relate? You can easily spruce each one up by adding other ingredients that your family will like such as onions, tomatoes, or some spicy touches.
Chicken Tortilla Soup: https://bit.ly/3T7SPFu
This soup is delicious and so easy to throw together. You can easily swap out ingredients for your own tastes; different beans, more spice, diced tomatoes, etc. If you have tortillas strips on hand throw those on the top, or if you’re like me and never have those just use tortillas chips!
Potato Soup: https://bit.ly/3S9uca5
Got picky eaters at home? You cannot go wrong with potato soup. Potato soup is so easy to customize, you can change the actual soup, OR you can change the toppings. It is so hot and creamy, you get the smoky flavor from the bacon, and cheese…. CHEESE makes everything better, right?
Ham and Bean soup: https://bit.ly/3s2Ae1z
Ham and bean soup, also known as soup beans, apparently, is the quintessential cold weather soup!
This is my go-to with our Thanksgiving and Christmas ham leftovers. The only other thing you need alongside this soup is CORNBREAD! 😉
Cheeseburger soup: https://bit.ly/3Ty3o4x
Now, this one is a little bit of a cheat. This one is not really a slow cooker soup, to start anyway.
This is a keto recipe that I found back in the keto craze. This one is one that you cook on the stove top, so it will be one that you choose for those fireside Sundays. THEN you can reheat it up in the slow cooker. If you are going to feed more than two people double or even triple this batch. 1. Because it is amazing and you will want more than one bowl and leftovers, 2. Because it doesn’t make very much. When I made this for 4 people, we ran out and left everyone wanting more.
Setting up a soup before you leave for work in the morning is a great way to set yourself up for an easy evening. Bonus! Make enough to have leftovers for lunches the next day. Send them in a thermos for the kids or take it to work. Soups are usually even better the next day anyway.
I’d love to know what you make in your slow cooker, and have you share recipes with us as well.
